Why Water Bent Barrels?

Water Bending at Dargaud et Jeagle ("D and J") Is a Proprietary Process.

Picture a large vessel which makes sure that the staves are warm and soaked prior to bending and toasting.

You say, "Yeah. But WHY?"

Have you ever burned your hands trying to use a wet dishtowel to take hot pot or pan out of the oven?

The heat has a chance to migrate deeper into the wood, therefore transforming the flavor impact to the wine.

"Yeah. WHY?"

Because you, my beloved eastern friends are not growing Old Vine Zin.

D&J barrels have manners, class, silky, polished structure and a long, linear finish. They do not overpower the wine. They build a frame beneath the fruit. They build a structure which compliments and balances a wine of a less bombastic scale.

And they allow the wine to live up to the expectations of the vineyard.

There is still time. We are shipping D&J's and Vallaurines to an Eastern port this year.
