The Spark Top One has landed. You may well know that the portion of the sparkling cork which does the heavy lifting is the cylindrical portion. I have witnessed the body of Amorim's sparkling corks being made. The quality control is impressive and the pressure tolerance of his closure far exceeds that of your glass. Still doing harvest the hard way? 'The easiest and most efficient way to process fruit in lots smaller than a gondola trailer is probably the venerable 1/2 ton plastic bin. These are far superior to the old school "Welch's Bins" in that they are structurally sound when rotated. Don't know what a "Welch's Bin" is you say? GREAT! This will be easy. When the grapes come up to the crush pad, you can take them a bin at a time straight to your Carlsen 6' Horizontal Receiving Hopper. Dump and run with your half- ton bins and a rotating head forklift. The fun in this is not only the time you save by not waiting on the person with the rake to finish the bin the hard way. You see, this hopper is gentle and delivers a better quality of fruit from the destemmer. Supplying a constant, metered feed of fruit to the destemmer, sorter, etc. enables you to find the perfect fruit flow rate for optimum quality. Height adjustable means that it will feed whole cluster to press, fermented reds to press (!), or feed the destemmer or sorting table. Gentle? Yes. Its has this kind of auger. NOT this kind. Carlsen only builds a certain number of these a year. You may want to put yourself on the list for 2020. The last part of the process that can go horribly wrong.... ....which could involve costly and injurious hits to your reputation, labor and materials expenses; i.e.: your bottom line is packaging.

The barrel surrenders a certain portion of itself to the wine in a symbiotic exchange which imparts tannin into the wine. This is for support of the fruit, clarity, color, and structure of the wine. But the part that we wait for is integration of the oak due to barrel respiration. Some types of oak integrate a little faster than others. And this is the process which requires a micro- level of slow and steady oxidation to round the edges of the structure, like the final sanding before finish is applied to a future heirloom.
